Gingersnaps

These are my absolute favorite and one that I make every year, especially around Christmas!

  • 2 1/4 c flour
  • 1 c brown sugar, packed
  • 3/4 c shortening
  • 1/4 c molasses
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 c sugar

In a large mixing bowl, combine 1/2 of the flour, brown sugar, shortening, molasses, egg, baking soda, ginger, cinnamon and cloves. Beat with an electric mixer until thoroughly combined. Beat in remaining flour. Shape dough into 1-inch balls. Roll in sugar to coat. Place 2 inches apart on ungreased cookie sheets. Bake at 375 for 8 to 10 minutes, or until edges are set and the tops are crackled. Cool on cookie sheets for 1 minute. Remove to wire racks. Yield: 4 dozen.
